Canned chicken can be good…

OMG Wow. Yum! So I have all this canned and dried food, veges and dishes and meat and stuff, just in case something like a Katrina or Sandy happens. Ok, maybe not hurricane related here. The trick can be to make canned and dried foods taste good not just be something to eat.

So I’ve always loved to cook and been told I’ve pretty good at it, not always in words but when people come back for seconds… Anyway, I’ve been on this gourmet cooking kick this week while on vacation, looking for recipes to try with this canned and dried stuff but haven’t been all that successful finding a lot. Even ordered a cookbook for it on Amazon (arrived today). But waiting hasn’t stopped me. One thing in the forefront of my mind that I’ve been struggling with is canned chicken. I love chicken. Could probably eat it every day. But probably not canned chicken though, it doesn’t taste bad but it doesn’t taste great either.

So last night I’m sitting at my favorite watering hole where a friend of mine bartends but she also works at a Mexican restaurant and she happened to bring a chicken fajita from the restaurant and gave me some to try. It was good. Really good. Inspiration! I had to run home…

So, one can of chicken, one can of chicken broth, a can of diced tomatoes, a green pepper, a whole onion, salt, pepper, onion and garlic powder later, I done good. Simmered in a skillet till the broth and tomatoes somewhat reduced, yum! Scooped some onto half of a burrito sized tortillas, accented with a little shredded cheddar, folded and yum! Had to make and eat another…

I would make this for any dinner party and I’m sure I’d have a hard time making enough…
