Rice & Tomatoes. YUM! Some may say, Spanish rice…

I was bouncing around the kitchen working on coming up with something for dinner tonight. I decided on rice and maybe some chicken. So I get the rice going, one of my favorite ways by boiling the water with chicken bouillon cubes and butter. A cup of rice and two instead of the usual one bouillon cube along with a 1-1/2 tbs. of butter.

Although I like the taste of the rice prepared just that way, I find it very tasty, I started thinking while I’m waiting maybe adding some diced tomatoes might be a nice touch. So I get a can of Red Gold Petite Diced Tomatoes with Green Chilies, drain the liquid, and mix them in with the rice.

And I taste.

OMG! Delicious! So I let the the rice finish absorbing the liquid. I then place some of the mixture in a bowl and top with a bit of shredded cheddar cheese. Even better!

I finished that bowl then filled it again with the remainder of the mixture and more cheese and finished that bowl too! Impromptu, simple, delicious dinner!

Never bothered or felt the need to make the chicken.
